Il faut avouer qu\u2019il est tomb\u00e9 dedans quand il \u00e9tait petit\u00a0! Il a fait ses armes comme sous-chef au restaurant l\u2019Albert Ier \u00e0 Malmedy. Il est ensuite parti en stage en France, pr\u00e8s de Lyon, dans un restaurant 2 \u00e9toiles \u00e0 Mionnay chez Alain CHAPEL. Son parcours professionnel l\u2019a ensuite conduit \u00e0 travailler comme chef de partie au Manoir Kasselslay (1 \u00e9toile).<\/p><p>Depuis bient\u00f4t 6 ans, il est \u00e0 la t\u00eate de son propre restaurant et, en parall\u00e8le, transmet sa passion aux \u00e9tudiants en donnant cours \u00e0 l\u2019IFAPME de Verviers.<\/p><p>Soucieux de se tenir \u00e0 la pointe de ce qui se fait de mieux en cuisine, Manu n\u2019h\u00e9site pas \u00e0 suivre des formations, \u00e0 faire des recherches et \u00e0 \u00e9changer avec d\u2019autres cuisiniers. Un v\u00e9ritable festival pour les yeux, une explosion de saveurs et des associations surprenantes mais plus d\u00e9licieuses les unes que les autres\u00a0!<\/p><p>Fort de cette nouvelle exp\u00e9rience, Manu a r\u00e9orient\u00e9 sa carte et a opt\u00e9 pour une cuisine moderne, cr\u00e9ative et innovante et il n\u2019h\u00e9site pas \u00e0 mettre \u00e0 profit toutes les nouvelles techniques de cuisine.<\/p><p>Manu travaille \u00e9galement les merveilleux l\u00e9gumes de Fanny Rion (Mara\u00eech\u00e8re \u00e0 Lierneux\u00a0: les Pieds Verts). Il privil\u00e9gie avant tout la noblesse du produit en le sublimant sans le d\u00e9naturer, tout en respectant la saisonnalit\u00e9. L\u2019un de ceux-ci est de faire appel \u00e0 une d\u00e9coratrice d\u2019int\u00e9rieur pour que le d\u00e9cor de son restaurant s\u2019harmonise au mieux avec sa philosophie et les plats qu\u2019il cr\u00e9e. A la base, il est seulement l\u00e0 pour accompagner le pain servi avec le repas, mais il n\u2019est pas rare qu\u2019on nous demande un morceau de pain suppl\u00e9mentaire pour le terminer. L\u2019id\u00e9e est simple et facilement r\u00e9alisable :<\/p><blockquote><p><strong><span>\u00ab\u00a0Choisissez un beurre de qualit\u00e9 (demi-sel ou nature, selon ce que vous d\u00e9ciderez d\u2019y ajouter). Laissez le beurre ramollir \u00e0 temp\u00e9rature ambiante. Battez-le vivement jusqu\u2019\u00e0 ce qu\u2019il blanchisse. Ajoutez la surprise aromatique de votre choix (Une compot\u00e9e d\u2019oignons finement hach\u00e9s avec de fins lardons, du pesto rouge ou vert, une pur\u00e9e de l\u00e9gumes\u2026 Amusez-vous !).
